This is a kind of stew made with herbs , beans , meat , lime powder ,etc.. ngredients :
. 2-3 cup ( 1 cup = 240 milliliters ) herbs ( scallion , parsley and optionally spivach ). 1 cup ( 1 cup = 240 milliliters ) red beans
. 300 grams meat ( 1 pound ( lb.) = 227.0 grams )
. 1 medium onion
. 3 tablespoon lime powder
. salt to taste
. ( optional ) pepper
. ( optional ) ½ teaspoon turmeric
. beans
Directions:
. Soak beans in salted warm water for several hours .
. Wash herbs finely .
. Chop herb finely .
. Peel onion .
. Chop onion .
. Saute onions .
. ( optional ) Add ½ teaspoon turmeric .
. Cut meat into small pieces .
. Add it to the onions and sauté .
. Add beans .
. Add around 8 cups water .
. Cook over low heat for 2 hours .
. Saute herbs .
. Add herbs to the cooking mixture .
. Continue cooking for another 1 hour .
. Add lime powder .
. Add salt .
. ( optional ) Add pepper .
. Serve with Polo . ( Polo has been described in the recipe for Polo .)
Note : You could cook beans before you start cooking and freeze . This way you can reduce the cooking time . Also you could sauté herbs and freeze

a vegitarian recipe

This is a kind of vegetarian food made with rice , milk , water and rose water and you can serve it with sugar or jam . Ingredients : ( 8 servings )
. 1 cup ( 1 cup = 240 milliliters ) rice
. 2-3 cups ( 1 cup = 240 milliliters ) milk
. 1 cup ( 1 cup =240 milliliters ) rose water
. around 4 cups ( 1 cup = 240 milliliters ) water
. ( optional ) 1 cup ( 1 cup = 240 milliliters ) cream
. ( optional ) sugar
Directions :
. Wash rice .
. Soak rice in warm water for a few hours .
. Pour 2-3 cups milk into a pan .
. Add rice .
. Add 2 cups water .
. Add 1 cup rose water .
. ( optional ) Add cream .
. Mix finely .
. Bring the mixture into a boil .
. Continue boiling until rice completely softens .
. Keep beating the mixture steadily .
. Cook over low heat .
. Remove the pan from heat .
. Pour the mix into a dish ( or small dishes ) and put it in refrigerator .
. You can serve this dish with sugar or jam .

A kind of mixed pickle
It is made with herbs , eggplant , carrot , chilies ,colored and green pepper , garlic , pickle condiment , salt and vinegar Ingredients :
. 4 cups ( 1 cup = 240 millilters ) herbs ( coriander , parsley , mint )
. white vinegar
. 1 big eggplant
. 1 big carrot
. 3 – 9 small chilies ( It depends how hot you want it .)
. 1 colored pepper
. 1 green pepper
. 1 green pepper
. 3 head garlic
. 3 tablespoon pickle condiment
. salt
Directions :
. Wash herbs .
. Chop herbs nicely
. Cut eggplant into small pieces .
. Pour 1 cup white vinegar into a pan .
. Add 1 cup water .
. Add eggplant pieces .
. Cook over low heat .
. Peel garlic .
. Grate garlic .
. Cut carrot into small pieces .
. Cut red pepper into small pieces .
. Cut green pepper into small pieces .
. Slice chilies into small pieces .
. Mix all ingredients together finely .
. Add cooked eggplant pieces .
. Add some salt ( around 2-3 teaspoon ) .
. Add pickle condiment . ( maybe you can obtain pickle condiment from Iranian ( Persian )stores .
. Mix finely .
. Drop a sponful of the mixture into a clean jar .
. Pour some vinegar into the jar .
. Repeat until the jar is completely ful .
. Pour white vinegar into the jar until it is completely ful .
. Place the lid on tightly.

A kind of rice dish made with black cherry jam , rice ...
This is a kind of rice dish made with black cherry jam , white rice , chiken breast , carrot , onion etc.
Ingredients : ( 6-7 servings )
. 2-3 cups rice
. 2 cups black cherry jam
. cooking oil
. butter
. 500 grams chicken ( breast )
. 1 small onion
. 1 small carrot
. ( optional ) saffron
. salt
Directions:
. Cook chicken with 3 cups of water , one onion and a carrot over low heat .
. Wash rice several times and soak in salted warm water for around 2 hours .
. Pour water into a pan and bring it to a boil .
. Add one tablespoon of salt .
. Add rice .
. Continue boiling until rice is rather soft .
. This takes about 5 minutes .( I t depends on the type of rice you use .) .
. Pour rice into a drain and wash but not much .
. Pour one tablespoon of oil into a non-stick pan .
. Add rice .
. Add chicken and black cherry jam .
. Mix rice , chicken and black cherry jam. Mix them all together .
. Add around 30 grams butter or cooking oil .
. Cover and cook over low heat .
. (Optional) Dissolve some saffron in hot water and add it to the mix .
Also you can fry chickens and serve separately.

. Pour rice into a drain and wash but not much .
. Pour a tablespoon of oil into a pan .
. Add rice .
. Add around 30 grams butter or cooking oil .
. Add herbs .
. Cover and cook over low heat for about half an hour.

Barg Kebob
This is a kind of Persian kebob made with lamb , olive oil , onion , yogurt and salt . Ingredients: ( 6-7 servings )
. 1500 grams lamb
. 1 large onion
. 1 cup yogurt
. salt
. 1 teaspoon saffron
. 1 tablespoon olive oil
Directions:
. Cut meat into small pieces .
. Grate onion .
. Add grated onions .
. Add salt .
. Pour yogurt and olive oil into a bowl and mix well .
. Add saffron .
. Marinate meat in the marinade for an hour .
. skew and barbecue .

. Fry ground meat .
. Add salt , pepper and turmeric .
. To make the spice mix wash green beans and cut into rather small pieces .
. Add 1 cup of water .
. Cover and Cook over low heat .There shouldnt remain much water .
. Pour 1 spoon of cooking oil into a pan .
. Add the spice mix .
. Add cooking oil or around 30 grams butter .
. Cover and Cook over low heat for about 30 minutes .
